Immune-Boosting Low-Carb Chicken Noodle SoupFrancais
4 c. (1 32 oz. box) organic chicken stock
4-5 garlic cloves, diced
1 lb. of baby carrots, diced
1 8 oz. package of Shirataki fettuccine-shaped noodles
1/2 cup pulled white meat roasted chicken
Pinch of salt
1-2 pinches of pepper
1-2 pinches of Herbs de Provence
1. Add the broth, garlic, carrots, salt, pepper and Herbs de Provence to a large saucepan and bring to a light boil. Lower the heat and cover for 10-15 minutes, or until carrots and garlic are soft.
2. Drain the liquid from the package of Shirataki noodles and run cold water over the noodles for 2-3 minutes to remove any scent from the water they are stored in. Then add them to the pot. Since they are long, you may want to use cooking shears to cut up the noodles into smaller pieces once they are in the pot. Put the lid back on and simmer for 5 minutes.
3. Add the pulled chicken, simmer for another 5 minutes and serve.
