Beef Vegetable Soup with Orzo PastaFrancais

Ingredients:
1 pound beef chuck roast cut into bite size pieces
1 large onion chopped
2 cloves of garlic minced
4 cups beef stock or broth
1 large can Hunts diced tomatoes ( they are the best!)
1 cup carrotts diced
1 cup celery diced
1 cup diced zucchini (optional but it is good)
1 tablespoon crushed dried oregano if you have fresh use (lucky you)
1 tablespoon crushed dried basil
1 tablespoon oil
salt and pepper to taste
1 can water (use tomatoe can) I always rinse out all the tomatoe goodness : )
Directions:
In a large pot on medium heat add oil then meat, sear to seal in juices and flavor,
add onions, celery and garlic let sautee till translucent, then add tomatoes and beef broth or stock, water, oregano, basil add salt and pepper to taste, let simmer on low covered for 1 hour,
then add vegetables simmer another 30 minutes on low covered, add Orzo simmer for 10 minutes covered, turn off heat let sit for at least 10 minutes before serving.
